1 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
2 teaspoons ground cinnamon
3 cups all-purpose flour
1 cup buttermilk
3 eggs
1 tablespoon honey
1/2 cup butter, melted
1.Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet, or donut baking pan.
2.In a medium bowl, mix sugar, baking powder, baking soda, nutmeg, cloves, cinnamon and flour. Mix buttermilk, eggs, honey and butter in a separate medium bowl, and stir into the dry ingredients. Spoon the mixture onto the prepared pan in doughnut shapes.
3.Bake 12 minutes in the preheated oven, until golden brown.

Amaranth Baking Powder Bread
Found this recipe online and tried it with Rice flour...yummy!
1 c AM Amaranth Flour
1 1/2 c Brown Rice Flour -OR- Whole Wheat Flour
1 tb Non-alum baking powder
1 ts Sea salt (optional)
1 c Milk, soymilk, or water
3 tb Honey
2 tb AM Unrefined Vegetable oil
--------IF USING RICE FLOUR-------------
2 Egg whites; beaten
Mix dry and liquid ingredients separately; beat egg whites, then combine all ingredients. Pour batter into well-oiled 8" x 4" pan and bake at 350 F. about 45 minutes. Cool 10 minutes before removing loaf to rack.

Milk and Egg Free Banana Bread
Sorry, no picture. It was so yummy that it was eaten before the camera came home!
1/2 cup shortening, butter or oil (I usually leave most of it out and use 1/3c applesauce)
3/4 - 1 cup white sugar
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
about 1 1/2c very ripe mashed bananas
1 - 2 teaspoons vanilla
chocolate chips if desired
Directions
1.Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8x4 inch loaf pan. (This can be made in any size pan or muffin tins just adjust the baking time)
2.In a large bowl, cream the shortening and sugar and add vanilla. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Stir in the chocolate chips. Pour batter into prepared pan.
3.Bake in preheated oven for 60 minutes, or until it tests done with a toothpick.
